Quick Easy Healthy Recipes

I continue to be honored and grateful for the opportunity to share not only my story of survival but to offer heart healthy recipes and healthy snacks you can make quickly.  So quick in fact that I can present them in under five minutes right on television!

Last week I was in Portland, Oregon on AM NW again to show two new healthy recipes that could be a lunch or healthy snacks.  Best of all, these foods will reduce the risk of having a stroke.

Here’s the Healthy Recipes

Omega-3 Rich Tuna Salad
Ingredients:

  • 1 can (6 oz) chunk light tuna or salmon in water, no salt added
  • 2 Tbsp yogurt
  • 2 tsp Dijon mustard
  • 2 stalks celery, diced
  • ½ cup red onion, diced
  • 2 cups organic baby spinach leaves
  • 4 Tbsp white beans
  • ½ avocado, diced
  • 10 cherry tomatoes, halved
  • Pinch paprika, smoked is best (optional)

Directions:

  1. Dice onion and let sit for 5-10 minutes.
  2. Mix first five ingredients together.
  3. Place baby spinach leaves on two plates. Top with white beans.
  4. Scoop tuna mix on top spinach and white beans.
  5. Place ½ of avocado and 10 cherry halves on each plate.
  6. Sprinkle with a pinch of paprika.

 Serves 2

 

Healthy Snacks – Homemade Trail Mix

Ingredients:

  • 1 ½ ounce raw nuts of choice (almonds)
  • 1 ounce seeds of choice (sunflower)
  • ¼ cup dried fruit of choice (apricot)

Directions:

  1. Mix ingredients together. Store in airtight container.

Serves 1

Broccoli Salad (and lots of other veggies)

Better Than Potato Salad or Pasta Salad

I’ve said it before, I just have better things to do with my life that spend a ton of time in the kitchen.  BUT, I want to eat good, healthy foods so I have to spend some time in the kitchen.  Which means I work really hard and finding ways to make foods quick and easy!

We got a last minute invite to hang out with some friends but I needed to make something quick – really quick.  This was my creation and everyone loved it.

Broccoli Salad (and other veggies) in the food processor

This salad came together in under 5 minutes – no kidding!  I hunted through the refrigerator for vegetables.  I found carrots, green onions, cabbage, and broccoli.  This seemed a little too veggie so I grabbed an apple too.  A quick wash and I put the shredding tool in the food processor.  The one we think of as the grater for cheese.  The carrots went in whole.  The cabbage, apple and broccoli needed a bit of cutting to fit.  I chopped the green onions so they didn’t get smooshed (technical cooking term!).

Here’s the key though – any fresh vegetables would be great.  Don’t feel like you need a definitive recipe to make something . . . sometimes the best foods come from spontaneity.

Quick Broccoli Salad Dressing

I whisked together 3 Tablespoons extra virgin olive oil with 2 teaspoons of apple cider vinegar then tossed it with the vegetables.  Again, have some fun with this.  I could have used sesame oil and coconut aminos for an Asian flavor or lemon juice for a more California flavor.  Just enjoy the surprise.

Finally I threw some sesame seeds on top for a bit of crunch.  I could have used sunflower seeds, pine nuts, pumpkin seeds . . . just about anything.  If you’re family likes a sweeter salad throw in a handful of dried fruit like cranberries.

Take Away

The most important thing to know is you can make a wonderful broccoli salad or any vegetable salad within minutes.  You can skip the higher caloric traditional stand by foods like potato salad or pasta salad for something that will be healthier for the whole family.

I was at the gym the other day when I saw one of the trainers have a new set of letters behind her name.  She explained to me that she was now a “nutritionist”.  I asked exactly what that meant since in most states (mine included) a “nutritionist” is a made up title with no professional regulation.  As I suspected, she had taken a long weekend class to be able to understand the supplements she would now be selling at the gym.  As I asked a few basic bio-chemistry questions related to nutrition, she was stumped . . . on all of them!

This scary story is happening all over.  Well meaning people are passing themselves off as nutritionists with little to no expertise in the field.

What to Ask a Nutritionist

When you are interviewing a potential holistic practitioner, ask a few questions.  Find out where they went to school, if their school was accredited, how many years have they studied to be a nutritionist, and if they are required to take continuing education credits in order to keep their license or certificate.

Holistic expertise isn’t something one can learn in a couple days.  Your practitioner should have at least a Bachelor of Science.  A good program, such as the University of Natural Health will offer a Bachelor of Science in Holistic Nutrition and should include classes such as Holistic Nutrition, PhytoChemicals, Biological Concepts of Enzymes, Natural Biological Diets, Physiology, and much more.  It took me a whole year of physiology to understand the expertise of the body and nutrition – quite frankly, a weekend course isn’t going to cut it!

Ready to Be an Expert in Holistic Nutrition?

When I was ready to progress with my career and wanted additional schooling with an expertise in holistic nutrition, the only degree I knew about was a Registered Dietitian and the closest program was five hours away.  Luckily the internet has leveled the playing field.  Many schools are offering online programs in place of the traditional brick and mortar concept of a university.  This is wonderful for people who want to go to school while continuing working, stay at home parents, individuals who don’t want to move, and offers payment options to make continuing education reasonable for all.

Do a little research to find what interests you and become not just a nutritionist but have real expertise in holistic nutrition.  I highlighted University of Natural Health because they offer a large variety like a Holistic Nutrition Degree such as a Master of Science in Holistic Nutrition or a Natural Health Degree such as a Doctor of Philosophy in Natural Health. In addition, they offer Holistic Nutrition Certification and Natural Health Certification Programs for students who wish to become a Holistic Life Consultant & Coach or as a Holistic Nutrition Practitioner or Holistic Natural Health Practitioner.

There’s so many options available in our advanced technology society, please don’t settle for just a nutritionist when you can be the best!

Steve Jobs inspires Join Up Dots

David Ralph, host of the amazing podcast Join Up Dots, started because of this quote from Steve Jobs:

“You can’t connect the dots looking forward; you can only connect them looking backwards. So you have to trust that the dots will somehow connect in your future. You have to trust in something – your gut, destiny, life, karma, whatever. Because believing that the dots will connect down the road will give you the confidence to follow your heart even when it leads you off the well worn path; and that will make all the difference.”

David “got it” and ran with it.  Now he interviews people all over the world to offer words of encouragement.  These aren’t just motivational speeches.  These are interviews where people open up and really look back at their dots in order to connect their future.

More than motivational speeches

I was honored when David asked me for an interview.  I hadn’t thought of myself as the type of person that gave motivational speeches and definitely not in any way shape or form part of the same circle as Steve Jobs.  But, when he told me to just tell my story . . . that my story might offer words of encouragement to others.  I was all in.

I opened up.  It’s a bit gritty.  I got teary-eyed.  It was tough!  That hour was scary and heart-wrenching.  But it was also . . . amazing!

Steve Jobs was right . . . believing your dots will connect does give you the confidence to follow your heart.  Those are wonderful words of encouragement.  And I’m so glad I got to be a little part of it.

I Put It All Out There

It’s hard to tell my whole story in an hour.  I’m almost 46 years into my life and I’ve lived a lot of life.  My journey has been winding, halting and had so really, really big bumps.  But, it’s my journey and David allowed me to share it – not like motivational speeches – honoring the journey and offering words of encouragement.

Join Up Dots is a fabulous free podcast and I’m especially proud of this interview.  Hopefully Steve Jobs would be too.

Your Thyroid – The thyroid is a complicated organ with many very important responsibilities, especially regarding weight loss.  Common signs of low thyroid function include low body temperature (including cold hands and feet), elevated LDL cholesterol, depression, constipation, fatigue, dry skin, thinning of the outer third of the eyebrows, and what’s called weight loss resistance (either gaining weight or inability to lose weight).

If you suspect your thyroid many be affecting your weight loss, get your TSH, free T3 and T4 as well as thyroid antibody levels checked.  One tricky part is to look for optimal levels, not “normal” ranges.  “Normal” is based on the last few years (usually around five) of tested patients so the “normal” has changed significantly over the years.

Take the time to discuss the results with your practitioner.  Slightly elevated TSH or low levels of free T3 can be due to low iodine or selenium levels, chronic stress, heavy metals, and gluten intolerance.

Coffee Could Effect Your Weight Loss

Don’t freak out yet!  Coffee has many great points too such as lots of beneficial antioxidants and the ability to increase your metabolism when drank in small doses.  Any more than a cup (that’s an actual cup – 8 oz. not a giant Double Gulp mug) starts the detrimental effects.  Plus it’s not just coffee that has caffeine, which is truly the issue.  Hunt out any hidden sources of caffeine such as chocolate, medications, and weight loss supplements.  All caffeine keeps adrenaline in your system longer potentially leading to stress on your adrenal glands so if you’re indulging in chocolate and coffee you might have an issue.

Gradually cut back to one cup of regular coffee or switch to decaf.  Another option is to switch to green tea instead of coffee.  Yes, green tea has a small amount of caffeine but it has other great benefits like antioxidants, plus my favorite amino acid theanine which calms the body, plus catechins that have been shown to boost metabolism, increase weight loss, and decrease hunger.  Another option is my favorite – Teeccino (no this is not a sponsored article), I just really love this product and it helped me get off coffee.  It’s a wonderful herbal tea that tastes a lot like coffee but has the health benefits of tea with no caffeine and no gluten.

Stress and Weight Loss

I just had a client tell me that stress helped her weight loss.  She was so busy and stressed that she wasn’t ever hungry, she didn’t need much sleep, she was going so much that her calorie burn was great, and her energy was high.  At first glance that seems pretty awesome but unfortunately a number of problems are also occurring.  The body can’t sustain that type of schedule.  The body is fantastic and can do if for a while by releasing additional adrenal and cortisol.  But, eventually you’ll crash which means excessive fatigue, more likelihood of getting sick, and late night food cravings.

Hormones are incredible here.  While you sleep, your stomach secretes a hormone called ghrelin which increases your human growth hormone.  This is the hormone considered the “fountain of youth” – people actually inject it into themselves trying for weight loss and looking younger.  But, when you indulge in that late night food craving the human growth hormone is suppresses and insulin is raised.  It’s like a one-two punch for weight loss . . . not good!

Low Stomach Acid

This is another complicated bio-chemistry area, low stomach acid causes a number of problems.  When it comes to weight loss it’s all about proper pH in the body.  Most people notice it when they have heartburn, bloating, or gas after eating.  Low stomach acid impairs protein digestion and create gut bacterial overgrowth.  It also lowers the pH which means any number of enzymatic reactions may not take place because everything about digestion starting in the stomach is based on pH.  When the pH is correct, the enzymes are signaled to do their jobs.

To help, try 1-2 tablespoons of apple cider vinegar before your meal.  This will increase the stomach acid and help protein digestion.  Read more about the health benefits of apple cider vinegar here.  Another suggestion is to not drink liquids while you eat.  This will help the stomach acid from being diluted.

Skipping Breakfast and Weight Loss

If weight loss is your goal, you can’t skip breakfast.  When you don’t “break” the “fast” from the night your cortisol (the stress hormone) increases, your body begins to store more fat, and has to draw energy from muscle.  Your metabolic rates slows down so you end up burning less calories throughout the day.  A study in the American Journal of Clinical Nutrition showed protein breakfasts keep you full and burn more fat than high-carbohydrate foods.  Read more information about breakfast here.  Not every one needs to eat a big breakfast for weight loss but you do need to eat something within about 30 minutes of waking.  Try one of these great recipes – Breakfast Frittata, Quinoa Cereal, or Grab & Go Bar.

Reuben Meatloaf Recipe

Introducing Reuben Meatloaf Recipe

You may ask, “how in the world did this come together?” or “why?”.  It’s actually all perfectly simple dinner ideas . . . . and oh, so DELICIOUS!

It all started when my friend Kirsten Shockey from The Fermentista’s Kitchen taught me how to finally make sauerkraut that was easy, tasty, and didn’t stink up my kitchen.  Fermenting foods is wonderful – great for digestion, great to use up vegetables, wonderful tasting – but, I just couldn’t seem to get the hang of it. I took a class from Kirsten because I was determined to at least learn a basic sauerkraut.  We did it!  My sauerkraut was amazing, if I do say so myself.  So, I wanted to make more and more . . . then I had to figure out how to use so much sauerkraut.

Reducing Grains in Dinner Ideas

I can’t eat a lot of grain; my system just doesn’t like it.  Because of this I have a tendency to put items like sandwich bread on the grocery list.  So, when my husband wanted to make a Reuben sandwich, he was out of luck.  But, I had some dinner ideas.  I started playing with the dinner ideas of a no-bread Reuben.  It didn’t really work out that well, quite honestly – the taste of rye is part of what makes a Reuben.

This recipe isn’t grain-free but I did find that a little whole rye added into the mix gave the taste and texture of rye without all the bread.  This makes it better for people like me who need to limit grains but rye has gluten so it’s not part of a gluten-free dinner ideas.

My family loved it!  My husband said it satisfied his craving and without all the extra bread carbohydrates.

Reuben Meatloaf Recipe

Ingredients:

  • 1/3 cup chopped onion
  • 2 cups rye
  • 3 eggs
  • 1/3 cup almond milk
  • 1 pound grass fed ground beef
  • 1/3 cup Dijon mustard
  • 1 ½ cup sauerkraut, drained
  • 6 ounces corned beef, thin sliced
  • 2 cups Swiss cheese, shredded

Directions:

  1. Preheat oven to 350 degrees
  2. Chop onion and allow to rest for 5-10 minutes.
  3. Coarsely grind rye in a food processor or blender
  4. In a small bowl beat eggs. Add onion, milk, and beef.  Mix well using hands.
  5. Add rye and mix until well combined.
  6. On a piece of parchment paper or foil, pat beef mixture into approximately a 13-inch x 6-inch rectangle.
  7. Spread mustard over loaf to within 1-inch of edges.
  8. Layer with sauerkraut, all but two slices of corned beef and 1 ½ cups Swiss cheese.
  9. Roll up jelly-roll style, starting with the long side and peeling paper or foil away while rolling. Seal seem and ends.
  10. Place meat loaf in 9 x 13 baking dish. Cover with used paper or foil.
  11. Bake for 50 minutes. Top with remaining corned beef slices and Swiss cheese.
  12. Bake 5 minutes more or until meat thermometer reads 155 degrees.
  13. Remove from oven and allow to rest for another 5 minutes before slicing and serving.

It’s Scary to Take a Risk

Total rewards are only found when we take a risk.  Last year I took a risk . . . many times.  Not all of them paid off.  In fact, I have a positive affirmation above my desk that says ‘I am a success in all that I do’ and my 9 year old son stopped by my office one and day and said, “Mom that’s a lie; I’ve seen you make mistakes and fail.”  Oh, out of the mouth’s of babes!  Leave it to your children to keep you reigned in!

But he’s right . . . I took the risk – again and again over the last year – success occurred and lack of success occurred.  (personally, I refuse to use the ‘fail’ word – no such thing – lack of success were was just learning steps)

As I look back at the year though, every risk was worth it for the total rewards I’m experiencing right now.  I’m so grateful!

It’s Time for YES

Those total rewards started with the risk when I said yes.

Free Stuff!

Fun Treats & Free Stuff

People always ask me what type of snacks I eat.  Not unexpectedly, it’s usually whole foods – soaked nuts and raw cheese, chopped veggies and hummus, homemade jerky or trail mix, apple and nut butter – you get the idea.  But, I like a fun treat just as much as the next person.  And one of my favorite treats is popcorn.

So I was intrigued when I first saw Cosmos Creations – premium puffed corn.  Okay, actually, I totally disregarded it because I figured it was just more junk-in-a-bag.  There’s so many problems with corn products I could write a whole other blog just about that . . . in fact, I answered a reader question about whether popcorn was healthier or not – read it here.  The short answer is yes, it can be, but it’s all about the ingredients.  This is why I had disregarded Cosmos Creations.

Then, it started happening.  First, a client brought an empty bag of Cosmos Creations to me to look at the ingredients, because she was in love with the Sea Salt & Vinegar flavor.  Next, I saw the products at last year’s NW Products Expo (but didn’t try them yet).  Then, one of my staff helpers brought them into the office, excited they were gluten-free (she has celiac disease).  Again, the bag was empty though by the time Cosmos Creations were brought to my attention.

Finally, I had a chance to try them.  Wow, really great!  Good ingredients.  Amazing company.  It was time for me to quit disregarding Cosmos Creations due to my own preconceived notions and find out what was going on with this product and company.

After taking a look, you know I had to ask them to giveaway product.

Ingredients – The Key to Good Snacks

The snacks start with corn, non-GMO corn.  It’s puffed and baked.  Even with seven flavors there is no gluten, trans fats or GMOs.  All ingredients are natural and you can pronounce every single one.  There’s very minimal processing and nothing artificial.  There’s no short cuts taken so you won’t find husks, shells, or kernels.

With flavors like caramel, salted caramel, and coconut crunch I figured this was a treat only for kids. Then I tried spicy sriracha and knew this was no ordinary snacks.  Honestly, aged cheddar and cracked pepper is my favorite – just a touch of savory with a hint of spice – kind of an “old-world seasoning”.  Just lovely.

Cosmos Creations began as “Cosmos Caramel Corn” in 2004 in the kitchen of a culinary artisan. After quickly becoming a local sensation, it expanded from the kitchen to a 5,000 square foot facility, producing over a dozen varieties of the unique caramel treat and gaining distribution across the state of Oregon (oh, yes, that’s my own state!).

In July 2011, Cosmos was purchased by the Strasheim and Tiller families, under the name 4 Him Food Group. Since the purchase, the company has moved to a new  production facility and the transition to Cosmos Creations began in September 2012 as the company sets up to expand on the national level.  And with the new, fun flavors, these snacks will take the world by storm!

Sometimes I Forget to Say “Thank You” to the Assistant

I hope it’s legal for me to use this picture of Julia Child.  I think in the context she’d be okay with it.  While on a pre-interview chat today, the host sent me this picture.  We had been talking about my foray into television and my gratitude for the assistant.

This picture shows what it really takes to make a television person look great – a whole lot of assistant!  Julia must have been an amazing women who expressed gratitude or these five people probably wouldn’t be sitting on the ground in their dresses, suits and ties trying to help her be successful.

As I look at this picture I realize I need to express more gratitude for not only the assistant in business and life but especially the assistant in television.

What It Really Takes in Television

Few people get the opportunity to see behind the scenes . . . you’d probably be amazed.  We read the price tags for television shows and movies and wonder how is that possible?  It’s because of the assistant.  There are so many people that make every show seamless.

Just in the little bit of television I do, I have my own assistant – who hopefully I give enough gratitude to because she is amazing, Miss Chela Sanchez!  Then there are the people that work at the airports, airlines, car rentals, and hotels where I stay along the way.  One than one assistant has saved my tush from these groups of folks!  The assistant that helps me find all the food for the demonstrations.  There is the hair and makeup assistant that makes sure I look better than normal (these people are miracle workers – trust me!).  Once at the studio, I find the Producer who is putting it all together and their assistant.  Then the sound assistant, teleprompter, lighting assistant, camera person, catering assistant, anchors, set designers, wardrobe assistant, grips, and honestly, a whole lot of other people running around making it all run smoothly.  And they do this every single day!  There isn’t enough gratitude for these people who make someone like me, someone they’ve never met, look and sound great.

But, there’s also my television assistant that helps me determine what the segment is going to look like – my business television mentor.  And, the media team that makes sure every television clip is up and running for readers and followers.  This assistant makes my whole business look good so I can do my job of helping clients . . . once again, the assistant makes me look good.

I found this picture too . . . look at all the assistant for this television shoot.  It takes a bunch of people!

At a recent event I was listening to a “behind the scene” television person explain how she had helped many great stars do even better on camera by rewriting text for the teleprompter (and a few other secrets I probably shouldn’t share).   It was amazing how, as the assistant, she could really help someone who showed gratitude and respect.  It was also funny to listen about when she would not offer to be the assistant for a television person.  She wasn’t sabotaging them or anything – just letting them be themselves.  Truly, just like any assistant, especially a television assistant, it really is in their power to help us . . . or let us fall flat.  She reminded me that it was about more than just gratitude, but common decency and respect, something I guess television might not have enough of for the assistant.

So Remember to Say Thank You

In all the running around and busyness of life, my television work is just another little piece.  But, this photo of Julia Child on her television show reminded me how much assistant is needed for everything to work beautifully.  I doubt those people enjoyed sitting around holding up pie tins as she worked her magic, but they did it . . . just like every other “behind the scene” assistant.

So, here’s a big shout-out to each assistant that’s ever helped me and I’ve forgotten to say thank you.  (I hope there aren’t too many of you.)

With all my heart – I have a tremendous amount of gratitude for each of you and all you do.

Hopefully, I’ll always remember to express my gratitude and say thank you, whether it’s on television or just in life.

I highly recommend you do the same, because it really does take a whole team for each of us to succeed.  I’m grateful for those surrounding me!

Red Snapper Recipes

Fish Recipes

I think at this point most people know it’s a good idea to add fish recipes into their diet.  The health benefits are well talked about by everyone, finally.

But easy fish recipes seem to be missing.  As you know, I don’t want to spend forever in the kitchen making complicated fish recipes (or any complicated recipes actually).

The first fish I decided to work with was red snapper.  I truthfully chose it because it was fresh in my fish monger’s case and I didn’t know too much about it.  A little snapper research taught me that red snapper is a low calorie, lean source of protein (no surprise – most fish fit into this category) that is very rich in selenium, potassium, Vitamin A, as well as Omega-3 fatty acids.  Snapper can contain mercury levels so use caution in eating if you are pregnant or have young children; limit snapper consumption to a few times a month then.  Otherwise add it in as a rotating fish in your diet.

If you are concerned about mercury in your red snapper recipes you can always replace it with pollock, cod or bass.

Snapper Health Benefits

Snapper has Selenium

Let’s take a look at red snapper’s main healthy ingredients.  Selenium is very high in red snapper; an average portion (3-4 oz) is about 70% of the recommended about.  Selenium supports white blood cell function and is necessary for proper thyroid gland function.  Plus, it’s an antioxidant that can prevent free radicals (I’ve covered antioxidant’s before so I won’t go over it again here).

Quick red snapper recipes tip:  selenium’s antioxidant power is increased when combined with Vitamin E so serve red snapper recipes with foods like asparagus (as in the picture), dark leafy greens, or sweet potatoes.

Snapper has Vitamin A

Red snapper recipes are also good in Vitamin A – between 11-14% or your daily requirement.  Vitamin A is vital for the immune system, production and maintenance of bones, health of the skin and eyes, and plays a role in cell production.  Many doctors recommend increasing Vitamin A consumption to help combat eye disorders like cataracts and age-related macular degeneration.

Quick red snapper recipes tip: Vitamin A is a fat-soluble nutrient and requires high quality fat to be absorbed so serve red snapper recipes drizzled with extra virgin olive oil or topped with a salsa containing lipid-rich avocados.  At the very least add a high quality fat to your vegetables.

Snapper has Potassium

Snapper is a good source of potassium providing 9-10% or your daily recommended amount.  Interestingly, potassium is both a mineral and an electrolyte. It is required by the body to trigger enzymes needed in energy metabolism and to allow smooth, cardiac and skeletal muscles to contract properly. Low levels of potassium can increase your chance of stroke, high blood pressure, osteoporosis, and kidney stones. Potassium is balanced by sodium so if you consume large amounts of sodium you may become deficient in potassium.

Quick red snapper recipes tip: To help maintain the potassium from snapper don’t add salt.  Try herbs and spices for additional flavor, or use the red snapper recipes below which contain no added sodium.

Snapper has Omega-3 Fatty Acids

Snapper isn’t the best fish choice for Omega-3 fatty acids but it still has enough to note for it’s health benefits.  Add snapper in as part of your variety so you can increase your overall fish and seafood consumption.

Red Snapper

Ingredients:

  • 1 Tbsp grated onion
  • 4 Tbsp hot mustard
  • 1 tsp garlic powder
  • 1 Tbsp extra virgin olive oil
  • 1 Tbsp basil, chopped
  • 1 Tbsp fresh lemon juice
  • 4 piece parchment paper
  • 4 Red Snapper fillets

Directions:

  1. Preheat oven to 350 degrees
  2. Grate onion and allow to rest for 5-10 minutes.
  3. Mix remaining ingredients (except fillets) in a small bowl.
  4. Place each piece of fish on a rectangle of parchment paper.
  5. Spread ¼ of the mixture on each fillet.
  6. Bring ends of parchment paper together and roll fold middle down towards fish. Fold ends up (like a package) and then fold under the whole parchment.
  7. Place fish bundles on ungreased cookie sheet. Cook for approximately 10 minutes or until fish flakes easily with a fork.
  8. Serve red snapper in parchment or remove to plate.

Easy Dinner Recipes

Simple Slow Cooker Recipes

I’m still loving easy dinner recipes made in with slow cooker recipes!  Using slow cooker recipes doesn’t mean that the food has to sit all day in order to make healthy dinner recipes.  In fact, the slow cooker recipes can be completed, from start to finish, in less than 30 minutes thanks to using the slow cooker as you would multiple pots and pans.  This, of course, makes the clean up much easier too!  I love slow cooker recipes that are truly easy dinner recipes!

Easy Dinner Recipes

Quick Cashew Chicken is very versatile.  Here I’ve served it over brown rice pasta but it can be eaten alone or served over rice.  I love that these easy dinner recipes cook all in one pot.  I recommend using chicken thighs because it seems to give a richer flavor but I tried slow cooker recipes using chicken breasts too.  I just didn’t feel the chicken breast was as moist and flavorful – but both were fine.  I tried both skinless, boneless chicken as well as regular.  I felt the flavor was a better with the bones and skins intact but the cooking time was increased.

For speed, and truthfully, what was in my freezer, I used peas but in other healthy dinner recipes that I worked through, I found fresh snow peas as well as both fresh and frozen asparagus to work well.

Remember, slow cooker recipes are very forgiving so work with what you have available to make easy dinner recipes.

Healthy Dinner Recipes – Quick Cashew Chicken

Ingredients

  • 1 onion, chopped
  • 3 cloves garlic, pressed
  • 1 Tbsp coconut oil
  • 6 chicken thighs
  • 1 red pepper, chopped
  • 1 cup diced tomatoes
  • 2 Tbsp black bean sauce
  • 1/2 cup cashew nuts
  • 1 cup frozen peas

Directions

  1. Chop onion and press garlic.  Allow to sit for 5-10 minutes.
  2. Heat coconut oil in slow cooker on high.  Add chicken to pot.  Cook uncovered approximately 10 minutes per side or until browned.
  3. Remove chicken from slow cooker and set on plate.
  4. Add the onion, pepper, and garlic to the slow cooker.  Cook 2 minutes stirring continuously.
  5. Stir in tomatoes and black bean sauce.  Place chicken on top of vegetable mixture.
  6. Sprinkle nuts on top of chicken.
  7. Cover and cook 5-15 minutes, until chicken is cooked through.
  8. Pour frozen peas into slow cooker and cook another 5 minutes.
  9. Serve over rice, pasta, quinoa, other grains, spaghetti squash, etc.

Sunrise While Traveling

If you’ve been following along over the past six months or so you’ve probably noticed I’ve been traveling ALOT!  Actually, I really enjoy the experience.  I’ve loved seeing  the sunrise all over, meeting amazing people, and helping women be healthier.  I really couldn’t ask for a better job.

To keep my Nutritional Therapy Practitioner certificate I must have continuing education every year.  One of the easiest ways to chunk a ton of great information at one time is to attend the Nutritional Therapy Association’s annual conference.  I was on the fence about going this year just because I’ve been traveling so much and didn’t want to leave again.

Until . . . the book store of the conference called and asked if one or two of my books could be offered to attendees at the store.  Of course!  So I made arrangements to have 30 of each book available to the buying public at the event.

Sign with Joel Salatin?

A few days (week?) went by and the book store called again to see if I would be traveling to Vancouver and be available for a book signing during the conference.  Of course!  Heck, almost any chance to talk to people about healthy living . . . I’m there.

Then just a few days (week?) before the conference the book store called again and asked if it would possible for me to push back my book signing event so they could schedule me and Joel Salatin to sign books together!

After I picked myself up off the ground, composed myself so it didn’t sound like I was screaming “yes” into the phone, I hung up and contemplated this turn of events.  In the nutrition world Joel Salatin is practically a god.  I think to some extent we all worship the impact Joel Salatin has made on farming, legislation, and battling for what is right.  To most, Joel Salatin stands for freedom.  To even think that I was worthy of being his equal . . . to consider I could sit next to Joel Salatin and sign books – it was an honor.

Traveling to Vancouver

So, off I went traveling again.  It started with a 5:00 a.m. flight out of Medford, Oregon to Portland, Oregon with all my books in tow.  Then a rental car to drive to Vancouver.  As I watched the sunrise in the side view mirror of my rented Hyundai Accent, I laughed at the turns my life had taken.  I was headed to Vancouver for a book signing with Joel Salatin, a man I’ve listened to speak at least three times.  I was up before dawn and would return home almost 21 hours later.  This is the glamorous life of traveling.  And, I loved every minute of it.

The image at the beginning of this blog is not mine as you can see.  I wasn’t going to chance trying to take a traveling picture while driving.  But, it felt right.  Watching another day dawn while traveling.

Final Take

Yes, I sold some books.  I talked to a lot of people.  Gave some advice.  Mostly, I just enjoyed the experience.  Traveling has allowed me to view many a sunrise as I adventure on with my journey.  For that, I am so thankful.  I hope a sunrise (or sunset) in your side view mirror will bring you just as much joy.

Healthy Dinner Recipes Made Easy

Slow Cooker Recipes – BBQ Chicken

As a busy, working mom I am always working on easy dinner recipes but they have to be healthy dinner recipes.  It doesn’t work for me to open a box of this processed food and a can of that processed food and call it healthy dinner recipes.

I’m not judging busy moms who choose this method . . . it just wouldn’t be very authentic for a whole foods diet specialist to be making easy dinner recipes using processed foods.

So, as you know, I love my slow cooker recipes for easy dinner recipes.  But, the one thing that I don’t like is that when the food cooks all day it often loses the beautiful colors that whole foods provide.  The speed, taste and convenience are there but everything has a tendency to be a bit drab looking.

Easy Dinner Recipes in Under 30 Minutes

I’ve been playing with my slow cooker to see what it can do on high in a short amount of time.  Another amazing feature of slow cooker recipes is they really can be fast, easy, and healthy!

BBQ is one of the family favorites but making homemade bar-b-que sauce takes a bit of time.  Not with this quick easy dinner recipes!  It cooks all in one pot in less than 30 minutes.  Pictured here is just the chicken thigh with the sauce over the top.  But, we found this was great over rice or noodles and served with mashed potatoes, squash, or cauliflower.

Next we “pulled” the chicken using two forks so it was shredded and mixed the bar-b-que sauce into the chicken.  This was fabulous as a sandwich, in lettuce wraps and made great leftovers.

I couldn’t believe how what an easy dinner recipes were created using the slow cooker.  This healthy dinner recipes can fit into any diet imaginable!

Slow Cooker Recipes – BBQ Chicken

Ingredients:

  • 1 small sweet onion, finely chopped
  • 4 cloves garlic, pressed
  • 1 tsp adobo chili with paste, pureed
  • 1/3 cup ketchup
  • 1/4 cup tomato paste
  • 1/4 cup apple cider vinegar
  • 1 Tbsp Dijon mustard
  • 1 Tbsp Worcestershire sauce
  • 2 Tbsp coconut sugar
  • 1 tsp smoked paprika
  • 1/2 tsp sea salt
  • 1/2 tsp fresh ground pepper
  • 2 pounds boneless, skinless, chicken thighs

Easy Dinner Recipes

Directions:

  1. Chop onion and press garlic.  Allow to sit for 5-10 minutes.
  2. Puree adobo chili and paste.
  3. In a bowl, whisk together garlic, chili, ketchup, tomato paste, vinegar, mustard, Worcestershire, sugar, paprika, salt, and pepper until well blended.
  4. Layer the onions on the bottom of the slow cooker.  Place chicken thighs on onions.  Pour sauce evenly over the thighs.  Cover and cook on high for about 2 hours, or on low for about 4 hours, or until chicken is cooked through.

Do You Like Celebrity News?

Well who doesn’t!

I got to learn a whole lot about Tucson Morning Blend host Tina Jennings when we sat down for a quick interview recently.

As you know, I was a radio talk show host for almost a year and a half.  I spoke with some BIG names but always over the phone.  This time I got to visit with my guest face to face.  And, Tina was wonderful!

Difference Between Television & Radio

Here’s the truth . . . by the time I’d done a ton of radio shows, I got the preparation work down.  Celebrity news is all around us and it’s not too hard to find out what’s happening.  I’d be ready so that I could come rushing in, throw on my headphones, and go.  I could show up in my sweats with no makeup and nobody knew!

That’s the real difference when it comes to television – you have to look good!  There’s hair and makeup and wardrobe ON TOP of all the other preparation work.  These people are amazing at their chosen fields.  I’m not sure if the average person who wants to be on television realizes how much work there is behind the scenes!

Plus, with radio there was an engineer that kept everything tight.  If I prerecorded the show that same person usually tightened it up and made me sound good (thank you for all the help!).  There’s a whole lot more going on with television – multiple camera people, sound folks, lighting, producers, heck there were even interns (oh, I remember those days as an intern with Oregon Public Broadcasting).

How Didn’t I Notice the Television Difference Before You Ask?

Simple – I was always the television guest.  I guess, I was the celebrity news.  So, although I still had to deal with hair, makeup, wardrobe, I just walked in and someone else took care of making sure the teleprompter was right, the sound was good, etc.  I was given my cue, the television host said their intro and I was on.  This was different, now I had to pay attention to more than just me!  I had to make sure Tina was the celebrity news star (okay, not so difficult obviously because she IS a celebrity news star!), but still, it was on me to make it all work.

I think I did okay, but I’ll let you be the judge (try not to tear me apart though – I have a fragile ego).  Let me know what you think.

Television – SO Much Fun

It may be inappropriate to write this (as if that has ever stopped me) but I LOVED this experience.  I had so much fun!  Television is so much fun!  Tina Jennings was amazing!  She was so fantastic I can’t even put it into words.  Thank you to John Glaser, Ken Carr, Tina Jennings and all the crew at Tucson Morning Blend for allowing me this great opportunity.  I sincerely hope this won’t be the last you’ll see of me sitting on the “other side” of the set!

I’ve written about my love of using the slow cooker for easy healthy meals.  (Search my site for a number of recipes and how-to videos).  These are basically make ahead meals and pot roast is a simple one.  But, I don’t feel like the flavor is as robust in the slow cooker.  Yes, I’ve tried searing the pot roast and extra seasonings.  It is still easy healthy meals but not quite as flavorful as the pot roast I remember my mother making.  Unfortunately, I’m not home all day to prepare pot roast; I truly need make ahead meals.

Make Ahead Meals

I recently spent a little time reading about my oven.  If you’re anything like me, this has never occurred to you before.  My oven is amazing!  Yours might be too.

My favorite feature (currently) is time bake.  This is where you put the food in the oven, set the time, temperature, and duration of cooking, and when you want the food done.  So simple for make ahead meals that are easy healthy meals!

I tried a couple different ways to make the pot roast and for the extra time and energy of searing the meat, my family didn’t notice.  I added beets and potatoes one pot roast too.  We liked the potatoes but not the beets (too mushy, not enough flavor, and added pink color to the other vegetables).

It took me less than 5 minutes to prep everything, stick in the oven, and magically pot roast and vegetables was ready when we got home.  Plus the house smelled inviting.

Bacteria Worries?

One of the areas of concern when trying make ahead meals is to keep foods in proper temperature range for safety.  After a few calls to ServeSafe folks and a bit of research, I feel this easy pot roast recipe is clear of danger.  Any bacteria will be killed during the cooking process since this cooks to very well done.  I like to call it fall-apart tender.  Plus, pot roast is a full slab, rather than ground, so any potential bacteria should be only on the outside which will get plenty cooked.

Easy Healthy Meals – Pot Roast Worth the Try

My family has asked that this make ahead meals be added to our regular rotation.  I agree as we had plenty of leftovers for lunches and even another night of enchiladas.  To make this an easy healthy meals, remember to purchase grass fed, pasture raised beef.  More information about why – here.  Remember, quality is the key.

Easy Healthy Meals – Pot Roast

Easy Pot Roast Ingredients:

  • 3-5 pound chuck roast
  • Sea salt
  • Fresh ground black pepper
  • 2 onions
  • 6-8 carrots
  • 2-3 small red potatoes
  • 5-8 cloves of garlic
  • 2-3 sprigs fresh rosemary or 1 tsp dried
  • 2-3 sprig fresh thyme or 1 tsp dried

Directions:

  1. Preheat oven to 275 degrees.
  2. Peel and cut onions in quarters.  Cut carrots into approximately 2 inch pieces.  Quarter red potatoes.  Peel garlic.
  3. Generously salt and pepper roast.
  4. Place roast in roasting pan.
  5. Place vegetables around roast.
  6. Place herb sprigs on top of roast or sprinkle dried herbs.
  7. Cover and roast for 3-4 hours depending on weight.  Roast is done when it’s fall-apart tender.

Survivor with Vanderpump Rules stars at San Diego Living

Yes, I’m a Survivor

This has been a busy week as I traveled from San Diego Living to the Morning Blend in Tucson talking about women’s heart health.  I can’t think of a better job!  I remember feeling scared, desperate, anger, frustrated, and depressed after my first heart attack.  Then more heart attacks, by pass surgery, and a stroke.  I think I even wrote – “what the hell?”.

But, everything happens for a reason, right?  So here I am, helping other women identify the symptoms and be their own advocate so they can avoid a heart attack and stroke.  I’m so fortunate to be able to talk about it . . . because I am a survivor.

1 in 3 Women are not a Survivor

That’s the statistic.  1 in 3 women will die from heart attack or stroke!  Think of your two closes girlfriends – statistically one will die from a heart attack or stroke.  That’s some scary numbers!

Heart disease is the #1 killer of women, taking more lives than all forms of cancer combined.  It’s time for women to really pay attention to their risks, their possible symptoms, and be their own advocate.  Let’s not lose more precious women to a heart attack or stroke.  Yeah, I’m on my soapbox.  I’ve been there – a heart attack sucks; a stroke is even worse (in my opinion).  But, I’m one of the lucky ones; I’m a survivor.

So, I’ve been out telling my story.  It’s not easy . . . but it’s worth it!  When I have a lady come up to me and tell me how she’s been ignoring potential heart attack symptoms or didn’t realize her risk factors and she commits to me to make a change . . . my life has more purpose than I could ever imagine.  I thank these women every time for joining me in this battle; for helping to beat this killer; for saving their lives.  Better than a survivor, let’s kick the heart attack and stroke to the curb!

My Fun Week

Okay – enough heavy stuff.  That first picture is in the green room of San Diego Living.  I was chatting with Tom Sandoval and Ariana Madix from Vanderpump Rules.  If you’re my age you may not know their hit series on Bravo (I didn’t) but your kids do.  Very sweet young folks (yes, I sound ancient now).  Ariana taught me how to live in my heels (I’m not giving away her secret but I am totally stealing it [thanks!]).

Survivor at Tuscon Morning Blend

Fun in Tucson

Next I headed over to Tuscon Arizona for the Morning Blend.  Okay, this is a terrible picture.  Why wasn’t I doing a “Vanna White” thing with their sign (oh, that’ right, Ken Carr’s desk was in the way)?  I really do need to lighten up some . . . it’s just a bit tough when I’m talking all serious about heart attack and stroke.

This was my second time at Tuscon Morning Blend and again, great people!  They seem to have so much fun together.  I just love that I was asked back to talk about women’s heart health.  I think I shocked Tina Jennings and Heather Stricker when they realized I was a survivor of both a heart attack and a stroke.

I was given a bit more time on the Morning Blend which was great to really get in depth about the symptoms of a heart attack for women.  Even though I was a bit under the weather and bloated, I’m really proud of this segment.  I hope women listen and pay attention.  I may have been able to prevent my heart attack if I’d know the symptoms . . . here they are:

Heart Attack Symptoms

H – hot and cold sweats

E – exhaustion

A – aches and pains especially in the jaw, neck, upper back

R – feeling like you want to retch

T – trouble breathing

See you doctor if you aren’t sure; heart attack symptoms are easy for women to dismiss.  Be your own advocate.  Trust your instincts.

Homemade Valentine’s Cookies

Cookies, cookies, cookies

Okay, I love treats, especially during the holidays.  But, healthy?  No, not usually.

Life’s short so remember the 80-20 rule . . . eat great 80% of the time so you can splurge 20% of the time.

These homemade Valentine’s cookies are closer to a splurge than to healthy, but they aren’t terribly unhealthy either.

And, I needed a bit of fun for the family this week!

Healthy Cookies?

So, if you’re looking for truly healthy Valentine’s Day cookies – this probably isn’t your blog.  But, if you want semi-healthy?  Maybe healthier?  Okay, not horrible for you homemade cookies – these were a ton of fun to make for the whole family!  And each of these Valentine’s cookies has a little surprise inside of strawberries and cream cheese.

If you are crunched for time, you can purchase decent sugar cookie dough but I prefer to make mine homemade.  It ups the health factor a touch.

I like evaporated cane juice for this type of recipe – I mean it IS sugar cookies.  If you can’t find it, please make sure you are using non-GMO sugar.

Don’t get too caught up in the amounts for strawberries and cream cheese.  Buy about equal amounts but make it too your taste.  Any extra can be used for Valentine’s Day crepes or pancakes.  Plus the extra will last about a week in the refrigerator so add it to oatmeal, celery, any fun food!

 

Valentine’s Cookie Recipe

Cookies

  • 1 ¼ c all-purpose flour, plus more for rolling
  • ¾ tsp arrowroot
  • ¼ tsp baking powder
  • 1/8 tsp sea salt
  • 2 tbsp pastured butter, melted and cooled
  • 1 egg, room temperature
  • 1 1/2 tsp vanilla extract
  • ½ c + 2 tbsp evaporated cane juice
  • edible colored sugar

Filling

  • organic strawberries (fresh or frozen)
  • organic cream cheese
  1. To prepare the cookies, whisk together the 1 ¼ cups of flour, arrowroot, baking powder, and salt in a medium bowl. In a separate bowl, whisk together the butter, egg, and vanilla extract. Stir in the evaporated cane juice. Add in the flour mixture, stirring just until combined. Shape the dough into two balls.  Tightly cover with plastic wrap and chill for 1 hour.
  2. While the cookie dough is chilling, prepare cookie filling.  If using fresh strawberries – wash, and remove the stems from the strawberries.  Puree the strawberries in a blender or food processor.  If using frozen strawberries – thaw and puree.  Strawberries should ultimately be about the thickness of jam or maybe even a bit runnier.  Measure the strawberries (or truly, I just ‘eyeball’ this step) and add about an equal amount of cream cheese.  Pulse until fully blended.
  3. Preheat the oven to 375°F, and line two baking sheets with parchment paper.
  4. On a well-floured surface, roll out one of the chilled dough until 1/8” thick. Lightly flour a heart-shaped cookie cutter and press into the dough (we used a 3″ one). Place the Valentine’s hearts onto the prepared baking sheets. Reroll the unused dough, and repeat or return to the refrigerator.  Work in small batches though as rerolled dough generally requires a little less cooking time.
  5. Place about 1/2 Tablespoon of the filling in the middle of a heart shaped cookies dough.  Make sure no filling is near the sides of the heart.  If you need to use less, that is fine, it’s just important to be able to “seal” the sides of the heart “pouch”.
  6. Place another heart shaped cookies dough directly on top of filling as close to covering the bottom heart shaped cookies dough as possible.  Carefully “seal” the two cookies together but pressing all around the outside edges of the cookie.  Make sure all filling remains between the two cookies or it will leak out and make a mess.  You may need to remove a little filling until you find the precise amount for your heart shape.
  7. Sprinkle with edible colored sugar.
  8. Bake the cookies at 375°F for 14-18 minutes.  Remember that the rerolled cookies may bake faster so keep an eye on them.  They should be just slightly golden.
  9. Cool on the baking sheet for 5 minutes before turning out onto a wire rack to cool completely.

Last week I had a GREAT interview with Johnell McCauley on Eat Great Live Well Radio! (It was fun to be on the other side of the interview!)

For almost a year and a half I was the interviewer as the host of my international radio show Eat Well to Live Well with Kellie Hill.  During that time I had some amazing guests and some not so great guests – it’s just the nature of putting together a show every single week.  I’ve also been interviewed on other shows – most of them great interviewers.

But last week’s was one of the best.  Johnell hosts Eat Great Live Well Radio.  I love that our two show names were so similar; it explains why there was such a great connection with us.  Honestly, it’s a fantastic interview!

Lose Weight

The topic was “Lose Weight the Easy (and Inexpensive) Way”.  But, honestly, Johnell took the whole foods diet concept way beyond how to lose weight.  We talked about how to bring kids into the meal planning and cooking; we talked about how my whole foods diet has saved my life; we really just had a great time!

It’s not often people take the time to send me emails about my interviews but I received quite a few (and even some phone calls) about how much people really liked this interview.  A whole foods diet is right answer for so many people and I really appreciate Johnell’s willingness to help me get this information to listeners.

 

Whole Foods Diet Tips

I had a great feeling going into this interview.  When I was prepping, somehow I just knew this was going to be great.  So I gave lots of great tips for listeners – probably too many really.  You may to listen to it twice to get all the great whole food diet tips and secrets about how to lose weight.  Sometimes my mouth just runneth over! My mother always said I was vaccinated with a phonograph needle.

First drive after heart bypass surgery – thanks healthy heart diet

My Heart Attack has given me New Opportunities

It’s weird when I first wrote the blog after my heart attack it was a bit tough to see how this could happen to me.  Yes, I joked about it, but truly, I didn’t know where this left me as a nutritionist.  The last three years have included that first heart attack, a couple minor heart attacks, heart bypass surgery, and a stroke that I hadn’t had the guts to write about yet.  (I’ll get that blog out soon – promise).

But this week, my life changed again!  This week as a representative of the American Heart Association I was sponsored to give two healthy heart diet presentations at the Training Center for Wells Fargo in Portland, Oregon.  This was followed the next day by a television appearance on AM NW and a “meet and greet” at the Wells Fargo Museum.  Then I came back home and gave another healthy heart diet presentation at the Regional Soroptimists Meeting.

What My Heart Attack has Taught Me

I was and am so grateful for this opportunity to talk about the healthy heart diet that has saved my life more than once.  So thankful to be able to talk about my journey, heart disease, heart attack, and stroke.  I believe this must be why I’ve beaten the odds.

Heart Disease Risk

Real quick – I want to sidetrack to talk about those odds.  1 in 3 women will die from a heart attack or stroke.  1 in 3!

Think about the women you know.

Now think about losing 1/3 of them to a heart attack or stroke.  That’s real folks!

Heart disease is the #1 Killer of Women . . . more deadly than all forms of cancer combined!

As women, we just aren’t paying attention!

Heart Attack Teachings

Okay, back to what my heart attack has taught me.  It’s taught me that every woman needs to know her risk factors.  Reminder here, I had NO risk factors and still had 100% blockage of my LAD!  If it can happen to me, it can happen to anyone.  More risk factors exponentially increases the overall chances that you will be the one that dies.  (sorry no sugar coating today)

Second, my heart attack has taught me that we need to be telling women how to recognize the symptoms of a heart attack.  This isn’t just a man’s disease and our symptoms are very different from a man’s.  (I’ll write another post about that soon – promise)

Finally, as women we have great instincts and we often ignore them.  I did, most women I know do.  We are busy, have things to do, our symptoms come secondary to what we need to get done.  My heart attack taught me to trust my instincts and be my own advocate.  First at the hospital when they tried to send me home.  Again, when I didn’t feel good taking the post heart attack drugs.  And consistently as I’ve journeyed through multiple angiograms, hospital visits, surgeries, doctors visits, etc.

Current Heart Attack Lesson

I started to write “final heart attack lesson” and then I realized – this isn’t my final lesson to be learned – it’s just the current one.

My heart attack and stroke won’t keep me down.  I’ve come back stronger, wiser, and more impassioned than ever (I know you probably didn’t think that was possible, huh?).  It’s true!  I have a message for every woman and for every person who loves a woman.  Hear me loudly – hear me clearly because I’m ready to speak out!
